Father & Son ride suggestions

I live in the Pacific NW near Portland Oregon and am looking for some suggestions regarding a good father son ride. My son is enlisting in the Army next summer and I wanted to take a week or longer road trip with him next spring or early summer so we could spend some quality time together before he left for basic training. I was initially looking at riding route 66 from Chicago back west. I began having second thoughts when i discovered it would cost over $1000 to ship the bikes back to Chicago
