Any idea what could cause this

What temp on the coolant ? My 5th gen did that when the cold start wax unit was not working properly. It would start fine then get to 50c temp & wax unit would cut choke & bike would stall, even when riding it. Check the coolant hoses to the wax unit & check the temperature at the wax unit & its operation. Once it reaches 65c it was fine.

Start with the battery for it's the weakest link in the whole system... To
determine the condition of an Maintenance Free battery give it a
refreshing charge... wait 30 minutes... measure terminal voltage...

 

12.8 or higher is a good battery...
12.0 to 12.8 is a insufficient charge... recharge...
12.0 or lower... battery unserviceable...

 

Lithium batteries require a different routine than lead acid... understanding the
chargers operation is key to success...

What is the state, type and age of Fuel in the Tank?

 

You may have a condensation situation and if you use an Ethanol Blended fuel this increases the absorption of water due to Ethanol's hygroscopic nature. If the fuel is old see if you can siphon out as much as possible and refill with nice fresh fuel Preferably non Ethanol Blend.

 

How old or how many miles/kilometres have the Spark Plugs done?

How clean or dirty is your airfilter?

 

Not just a case of the Idle Speed adjuster incorrectly set by any chance? Or perhaps as Mowhawk suggested a faulty fast idle wax unit?

It’s a vfr 800 2007 model had brand new battery  starts on the button come off of choke let to get hot 95 on oil temp  revs drop to 1000 then bike starts to stall  petrol is fresh  only put in other day  hard to start once stalled
